Any protein/veg: 800 kg, Garlic paste: 2 tsp, Ginger paste: 1 tsp, Chopped onion: 2 large, Roganjosh Spice Blend – 3 tsp, Tomato puree: 1 cup, Yoghurt : 3 tbsp, oil – 4 tbsp, sugar: 1 tsp, Salt
Sauté onions in a pan till light brown in colour. Add your chosen protein or veg and seal the juices on a high flame for about 3 minutes. Next add ginger garlic paste and cook for another 4 minutes. Add tomato puree, yoghurt and 2 tsp of roganjosh spice blend, stir well and continue to cook for 6 minutes on high heat. Add sugar and salt. Cover and cook on low heat stirring once in a while for 30-45 minutes depending on time to cook your choice of protein. Add remaining 1 tsp of roganjosh spice blend 5 minutes before taking it off heat. Serve hot with boiled rice or any Indian bread.
Make curry sauce – Combine with different ingredients such as onion paste, tomato puree, yoghurt, coconut milk to make gravies and sauces
Use as Marinade – Add 2 tsp of Rojanjosh Spice Blend and salt to yoghurt or olive oil or ginger-garlic paste to make a marinade
Make dry rub – Rub in Rojanjosh spice blend into your chosen protein for adding additional flavour.
