Chicken: 750 kg, Garlic paste: 1 tbsp, Onion paste: 1 onion, Ginger paste: 1 tbsp, Butter Chicken Spice Blend – 3 tsp, Tomato Puree: 1 cup, Thick Yoghurt: 4tbsp, Butter: 3 tbsp, Cream: 4-6 tsp, Honey: 2 tsp, Salt
Marinade the chicken or your choice of protein in 2 tsp of Butter Chicken Spice Blend, 1 tsp garlic paste, I tsp ginger paste and set aside. Stir fry the chicken until ¾ done in batches and set aside. Heat butter in a pan, and sauté the remaining ginger garlic paste with onion paste for 8-10 minutes. Add tomato puree, 1 tsp of the Butter Chicken Spice Blend, salt and continue to cook until you see the butter leave the side of pan. Add chicken pieces and cover and cook until done. Add Cream and honey and serve hot with rice or bread.
EXTRA NOTES – Add extra chilli powder if you prefer it hot. Onion paste is optional, you do not need to add onion if you want to save on cooking time.
Make curry sauce – Combine with different ingredients such as onion paste, tomato puree, yoghurt to make gravies and sauces
Use as Marinade – Add 2 tsp of butter chicken spice mix and salt to yoghurt or olive oil to make a marinade
